Skirt Steak Fajitas

Bring the fiesta with this skirt steak recipe!

Marinade:

· 2 tbsp olive oil

· 1/3 cup freshly squeezed lime juice

· 2 tbsp fresh chopped cilantro

· 2 cloves garlic, crushed

· 1 tsp brown sugar

· ¾ tsp red chili flakes

· ½ tsp ground cumin

· 1 tsp salt

· 1 lb skirt steak

Fajitas:

· 3 bell peppers, deseeded and sliced

· 1 onion, sliced

· Warm flour tortillas

· Sour cream

· Avocado

· Limes

· Your choice of cheese

Preparation:

1. Whisk marinade ingredients together. Reserve half of marinade for vegetables.

2. Marinade fajita meat for minimum 30 minutes or up to 8 hours in refrigerator. Remove from refrigerator 30 minutes prior to cooking.

3. Heat 1 tsp oil in a grill pan, cast iron skillet, or bbq grill over medium heat.

4. Cook steak each side until desired doneness (approximately 4 minutes each side for medium-rare). Set aside and allow to rest for 5 minutes.

5. Slice against the grain into thin strips.
