Also known as the Vegas Steak, this cut comes from the opposite side of the shoulder from the beloved Flat Iron Steak. This cut has a strong marbling profile and is very similar to it's cousin that sits on the other side of the scapula. This cut is DRY-AGED and packaged one steak per pack.

This is a CERTIFIED PRIME CUT, meaning that it has been evaluated and officially graded by a USDA grader.
