The 3-point cut! This cut is best cooked on the smoker with a low and slow cooking method. Each Tri-Tip is DRY-AGED and has a "Half-Ass Trim" meaning there is enough fat cap to fuse into the beef, but not enough to be annoying.
This is a CERTIFIED PRIME CUT, meaning that it has been evaluated and officially graded by a USDA grader.
