Also known as the Mock Tender Steak, this cut comes from the Chuck of the beef. This steak is cousins to the Tenderloin, but should not be compared due to the differing flavor profiles and levels of tenderness. This cut is cut around 1 1/4" thick, DRY AGED to perfection, and packaged in twos. Our favorite way to cook this cut is to wrap in bacon, and sear on the grill.
This is a CERTIFIED PRIME CUT, meaning that it has been evaluated and officially graded by a USDA grader.
