Also known as the Picanha, this cut is best cooked low and slow with a little bit of smoke. The Coulotte comes off of the Top Sirloin and has a thin fat cap that melts into the beef when cooked. This cut is DRY-AGED for 14-21 days for optimal flavor and tenderness.
